Chocolatey Chocolate Chip Oatmeal Cookies


One of my favorite cookbooks when I'm short on time is Quick Fixes with Mixes...."Great tasting desserts made with mixes."  I love to cook and bake, but sometimes I don't have the extra time to put into a "completely homemade" gift.....that's when I pull out a cake mix and whip up some cookies, unique cakes, pies, or some other delectable dessert from the above cook book.  Thought I'd share a recent cookie --- make with a chocolate cake mix

Chocolatey Chocolate Chip Oatmeal Cookies
1/2 cup butter or margarine, softened
2 eggs
1 (18.25 oz) German Chocolate Cake Mix
3/4 cup old-fashioned oats
3/4 cup semi sweet chocolate chips
1/2 cup coarsely chopped pecans (or walnuts)

In a large bowl, blend butter with eggs.  Stir in cake mix and oats.  Blend well.  Stir in chocolate chips and nuts.
Drop by heaping teaspoonfuls onto a greased cookie sheet. Bake for 10 to 12 minutes. Removed from oven and let cool on cookie sheet for 1 minutes.  Removed cookies to cooling rack.
Pour yourself a big glass of milk and ENJOY!!

These sound divine! What's different about a german cake mix as compared to an ordinary chocolate cake mix though...? I've never seen german cake mix, don't think we have that over here.

Monique, The cake mix is a German Chocolate Cake mix ---- the kind you use a coconut icing with........but any chocolate cake mix will work. I didn't actually use what it called for myself --- think mine was something like a dark chocolate mix??
