Feather Pancakes

This is my favorite pancake recipe -- turns out light and fluffy and so yummy! Once I found it (several years ago) I never looked back --- no more bought pancake mixes for me. Breakfast food is probably my favorite kind of food -- I usually fix it for supper about once a week!  This cookbook is where the recipe for these pancakes comes from:  The Christian Bed & Breakfast Cookbook -- full of all kinds of yummy breakfast food.

Feather Pancakes
3/4 cups flour
1/3 teaspoon salt
1 Tablespoon baking powder
1 1/3 Tablespoons sugar
1 egg, beaten
3/4 cup milk
1 1/3 Tablespoons salad oil
Mix flour, salt, baking powder, and sugar together. Blend together egg, milk, salad oil; add to flour mixture and beat until smooth.  Allow batter to sit for ten minutes.  Cook on griddle. Serves 4

One of our favorite ways to eat pancakes is with peanut butter and maple syrup on top.
Another variation is to make homemade McGriddles out of them.....make mini pancakes, top with bacon (or sausage), egg, and some maple syrup...makes a yummy breakfast sandwich.
