Amish Baked Oatmeal
3 large eggs
1/2 cup apple juice concentrate OR applesauce
1 1/2 cups milk
1/4 cup butter
1/2 maple syrup OR honey
3 tsp cinnamon
2 tsp baking powder
3 cups quick oats
Optional Add-Ins
1 medium apple (peeled and chopped)
1/2 cup walnuts OR pecans OR almonds (diced)
Raisins OR Craisins OR Dried Apricots
Topping:
1/2 cup brown sugar
1 tsp cinnamon
Preheat oven to 350 degrees
Melt butter in 9 x 13 glass baking dish - set aside
In bowl, combine whip eggs, apple juice, milk, and maple syrup together till foamy.
Add cinnamon, baking powder, oatmeal - stir till mixed.
Add fruits and nuts and any other add-ins....stir till mixed
Pour into baking dish and top with topping.
Bake for 45 minutes or until puffed and slightly browned around edges.
Let cool for 10 minutes before serving.
Serve and Enjoy!
(note: you can also pour milk over it before eating)

Oh! Yum! This is easy to turn into a gluten free model with GF oats from Bob's Red Mill and Almond Milk. We have a Amish Market that just opened up in town and folks talk about their baked oatmeal - but I know they use the gluten oats. This will be baking in my house this week!

I always eat raisins in my oatmeal, but the apples appeal to me. I'll have to try that with the raisins.
