Yummy Breakfast Muffins
1/3 cup white sugar
1/3 cup brown sugar
3/4 cup plain yogert
1/4 cup oil
1 tsp. vanilla
2 cups shredded carrots
2 shredded apples
1/2 cup craisins
1/2 cup walnuts
1/2 tsp. salt
1 tsp. cinnamon
2 tsp. baking soda
2 cups flour
(may use 1/2 white and 1/2 wheat if desired)
Combine wet ingredients, beat with mixer till smooth.
Add shredded carrots/apples, nuts, craisins.
Combine dry ingredients and stir into wet mixture just until mixed.
Place in buttered (or lined) muffin cups.
Bake 18 minutes in 350 degree oven.
Let set 5 minutes before removing from pans.
Ah...yum! I love these kinds of muffins. I'm not much for the tall airy ones.
