Zucchini Cookies
1 stick butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/4 tsp. cinnamon
1 cup grated zucchini
1 cup oats
1 cup flour
1/2 cup walnuts
1/2 cup chocolate chips
Preheat oven to 350 degrees.
Cream sugars and butter together.
Add zucchini, egg, and vanilla - beat.
Combine dry ingredients and add to wet mixture.
Add walnuts and chocolate chips
Drop by teaspoon fulls onto buttered cookie sheet.
Bake @ 350 degrees for 8 minutes - let set on cookie sheet 3 minutes before removing to wire racks -- cool.
ENJOY!
These cookies turn out cake like -- so soft and yummy. Both my therapist and his receptionist LOVED them!

Yes. I have a picky three year old living with me right now. THIS I think she'll eat--and she'll never know there are veggies in them! TSM!
Mmmmm. A friend gave us a loaf of zucchini bread on Sunday. I'd have to take some batter out of these and add raisins. No one else here gets quite the delight out of raisins that I do!
