Chicken and Rice Soup

I wanted to take something to an older man who had surgery last week, and soup seemed like the perfect "gift."  Thought I'd share the recipe on my blog ... it makes a nice "after surgery...not feeling so well" meal!
As usual -- I dump and pour, so these measurements are estimated.....add more or less to taste.
Chicken and Rice Soup
2 split chicken breast
5 T.  butter
1/2 onion (chopped)
4 to 5 fresh mushrooms (chopped)
2 to 3 carrots (chopped)
1 tsp. garlic powder
1/2 tsp. onion powder
1 tsp. salt
2 tsp. pepper
1 1/2 tsp. cumin
2 boxes Rice a Roni Long Grain and Wild Rice
1 can cream of chicken soup
Add water to a large stock pot along with the 1st ten ingredients.
Boil until chicken is tender and done; remove from bone and return to pot.
While chicken is cooking; prepare the rice according to the directions on the box.
When the rice is done; add one can cream of chicken soup - mix.
Add the rice mixture to the soup pot.
Stir, Serve, and Enjoy

When gifting you could included a few cornmeal muffins (click here for recipe) and a pack of saltine crackers (not pictured because I picked them up on my way up to the gentleman's house.)
I also took him a slice of apple pie for dessert -- he was pretty tickled to have lunch in a basket all ready to eat!

Looks good. Nothing tastes better than soup when you're not feeling well. Love the basket. And the apple pie would top it off just perfectly.
