Oatmeal Cream Cookies

One of my favorite cookie recipes from my sister in law, Pam.  Oatmeal cookies with a creamy marshmallow filling!
Oatmeal Cream Cookies
1 1/2 c. shortening
2 2/3 c. packed dark brown sugar
4 eggs
2 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 tsp. baking soda
1 tsp. salt
Cream ingredients together and add:
4 cups old fashioned oats
2 1/4 cups flour
Drop by teaspoon fulls onto greased baking sheet and bake 12 minutes at 350 degrees.
Note: I've substituted light brown sugar and regular oats and they turn out fine.
Filling:
3/4 cup shortening
3 cups powdered sugar
1 container marshmallow cream (the big one)
1 - 3 T. milk
Cream together and place between layers of oatmeal cookies
YUM!
